Southern Sour Cream Pound Cake

Ingredients

  • 1 cup butter, softened
  • 3 cups sugar
  • 6 eggs, separated
  • ¼ tsp baking soda
  • 3 cups flour, sifted
  • ½ pint (1 cup) sour cream
  • Fresh summer berries, to serve
  • Whipped cream, to serve

Linda's Tips

  • Make sure butter is fully softened for the creamiest texture.
  • Sift the flour before measuring for a lighter crumb.
  • Fold egg whites gently — don't deflate all that air!
  • Grease and flour your tube pan generously to prevent sticking.
  • The cake is done when a toothpick comes out clean and the top is a rich golden brown.
  • Let it stand a full 15 minutes before removing from the pan.

Instructions

    Preheat your oven to 300°F. Grease and flour a large tube pan thoroughly.

    Cream the butter and sugar together until light and fluffy, about 4–5 minutes.

    Add the egg yolks one at a time, beating well after each addition.

    Stir the baking soda into the sifted flour and mix to combine.

    Alternately add the flour mixture and sour cream to the creamed butter mixture, beginning and ending with flour. Mix until just combined.

    In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter until no white streaks remain.

    Pour the batter into the prepared tube pan and bake at 300°F for 1½ hours, or until a toothpick inserted in the center comes out clean and the top has a beautiful golden brown crust.

    Remove from the oven and let the cake stand in the pan for 15 minutes before turning out onto a wire rack to cool completely.
